Filipino Pork barbecue normally done on bamboo skewers, and is a common item in small backyard party. Pork cut into square pieces, marinated with soy sauce, calamansi juice, ketchup, minced garlic, sugar and seasoned with black pepper, chopped red chillies and lemon soda. A basting sauce made with soy sauce, ketchup, sugar and oil. So it’s handaan time, it is also barbecue time! This barbecue recipe is best tailored for the Filipino taste.

INGREDIENTS
1 kilo Pork kasim
6 cloves garlic (minced)
1/2 cup soy sauce
1/2 cup banana ketchup
1/3 cup calamansi juice
2 tablespoon sugar
1/2 cup Sprite (or any lemon soda)
1 teaspoon black pepper
siling labuyo (optional)

Directions
In a large bowl, combine the soy sauce, calamansi juice, ketchup, minced garlic, sugar, black pepper, chopped red chillies and lemon soda. Mix until well combined.
Add the pork kasim cuts and massage them with the marinade. Cover the bowl with a plastic wrap and let it marinate for at least 4 hours or better if refrigerated overnight.
Grab your bamboo sticks and soak them in water.
Gently skewer the marinated meat in the bamboo sticks. Do this will all the meat cuts.
For the basting sauce, combine the ketchup, soy sauce, sugar and cooking oil in a bowl. Mix until well combined.
Prepare your grilling station and fire up the charcoal. Grill the pork barbecue around a minute then flip it. Start brushing them with the basting sauce. Flip occasionally and brush with the sauce to cook them evenly. When the crust are brown and the meat is smokey, then the barbecue is ready.
Serve the barbecue with your favorite vinegar dip. Make papak or serve it with garlic fried rice and atsara. Enjoy!

Ingredients:
1 cup ketchup
1/2 cup vinegar
1/4 cup brown sugar
1 stick butter
2 tbsp honey
1 tbsp Worcestershire sauce
2 tbsp mustard
paprika and salt
1 tbsp lemon juice
1/4 tsp hot sauce

1. Combine all ingredients in saucepan and stir until butter has melted.
2. Coat on chicken, meat, or anything! Enjoy.

Baby Back Ribs (you can use any pork ribs)
4 tbsps butter
1/4 cup honey
1/4 cup beer, broth, or juice
1/2 cup brown sugar
salt, pepper, garlic, onion powder, smoked paprika
BBQ Seasoning
1 tsp liquid smoker
1 tbsp yellow mustard (binder)
BBQ Sauce

Directions:
Preheat oven to 275. Remove membrane from back of the ribs with a paper towel for extra grip. Apply thin layer of liquid smoke and then mustard. Season with all purpose seasoning, smoked paprika, and BBQ Seasoning on both sides and edges. Place ribs on wire rack and then into the oven for 2.5 hours. Remove ribs from oven and wrap tightly in foil after applying honey, brown sugar, and butter. Add 1/4 cup of liquid (beer, broth, or juice) to the foil. Place wrapped ribs in the oven for 2 hours or until almost fall off the bone tender. Remove from the foil, warm BBQ sauce, and coat ribs evenly in sauce. Place back in the oven for 15 minutes. Allow ribs to rest for 10-15 minutes before slicing.

How to make bbq ribs in the slow cooker? Search no more cos these ribs are so tender and deliciously slow cooked, they fall right off the bone.

INGREDIENTS

3 and 1/2 lbs Ribs
3 Tablespoon brown sugar
2 teaspoon chilli powder
2 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
salt and black pepper to taste
1 cup barbecue sauce

Brief Instruction

Ribs must be cut into equal halves to fit slow cooker
Remove membrane from ribs and pat dry with paper towel
Combine all spices and season both sides of ribs
Place 1 half of ribs into slow cooker then pour/spread with half of the barbecue sauce
Place the other half of ribs into the slow cooker then pour/spread with remaining bbq sauce
slow cook on low for 8 hours

Altijd al de makkelijkste ribs ooit willen en kunnen maken?
Volg dan al deze stappen en dan komt alles helemaal goed, ja toch?
Ga maken dan, lekker man.

Easy Spareribs.
Ingrediënten:
- 3 x zijdes spare ribs
- Genoeg water zodat de ribs onder water staan (+/- 2 liter)
- 1 el knoflook poeder
- 1 el gemalen peper
- 2 el zout per liter water

Bereiding:
1. Pleur je ribs in een grote pan met al je kruiden en zout.
2. Laat 1 1/2 uur zachtjes pruttelen totdat het bijna uit elkaar valt.
3. Haal uit je pan.
4. Gooi je BBQ aan.
5. Smeer je Ribs in met BBQ saus en karameliseer de ribs op je bbq (+/- 10 minuten).
6. Klaar!

Smokey BBQ sauce.
Ingrediënten:
- 50 ml appelciderazijn
- 1 el sojasaus
- 30 ml worcestershiresaus
- 3 el bruine suiker
- 1 el appelstroop
- 2 tl koreaanse pepperflakes
- 1 tl knoflookpoeder
- 1 tl uipoeder
- 2 tl gerookte paprikapoeder
- 2 el hotsauce
- 250 ml ketchup

Bereiding.
1. Pleur je azijn, sojasaus, worcester in een pan een kook het
2. Gooi al je suiker, appelstroop en kruiden erbij.
3. Los het op
4. Flikker je ketchup en hotsauce erbij.
5. Laat 15 minuten op laag vuur intrekken en bubbelen.
6. Klaar!

Romige coleslaw.
Ingrediënten:
- 1/4 van een hele witte kool (+\- 100 gram)
- 1/4 van een hele rode kool (+\- 100 gram)
- 1 wortel
- 1 ui
- 4 el mayo
- 2 el appelciderazijn
- 2 el grove mosterd
- Peper en zout

Bereiding:
1. Rasp je rode kool en je wortel.
2. Snij je ui en witte kool heel dun.
3. Meng je mayo mosterd, azijn en peper en zout.
4. Gooi bij je slaw en klaar!

Zuurtje!
Ingrediënten:
- 2 ui (fijne ringen)
- 1 l kokend water
- 400 ml appelciderazijn
- 4 el suiker
- 1 tl zout
- 1 teentje knoflook
- 5 hele peperkorrels
- 1 jalapeno (fijne ringen)

Bereiding.
1. Ui in fijne ringen
2. Gooi in een bak en gooi je kokend water erop.
3. Laten uitlekken en gooi je uien in een grote bak
4. Gooi de rest van al je ingredienten bij je uien.
5. Laat minimaal 1 uur staan (langer is beter)
6. Klaar!

Whether you're cooking in a competition or just want to wow your family and friends at home, this method has proved very successful in my career. I often say that competition barbecue is "one bite food", because that barbecue needs to be so good and perfectly cooked, that one taste will blow the taster away. While there are a lot of steps to this recipe, I think the end results are well worth the effort.

Fall off the Bone Ribs

WHAT MALCOM USED IN THIS RECIPE:

Fall off the Bone Ribs Recipe
- 2 slabs of St. Louis Cut Spare Ribs
- 1/4 cup Killer Hogs AP Seasoning
- 1/4 cup Killer Hogs The BBQ Rub
- 2 sticks of butter
- 1/4 cup honey
- 1/4 cup Killer Hogs Vinegar Sauce
- 2 cups Killer Hogs The BBQ Sauce

Directions:
1. Prepare smoker for indirect cooking at 275F using hickory wood for smoke flavor.
2. Remove the membrane from each rack of ribs and trim away any excess fat. Season each slab with AP seasoning followed by a layer of The BBQ Rub - substitute your favorite seasonings if desired.
3. Place each rack on the pit and smoke until the rubs adhere to the meat and the color turns a dark mahogany about 2 to 2.5 hours.
4. Cut each stick of butter in half lengthwise and place on a sheet of aluminum foil big enough to wrap the ribs.Drizzle the butter with honey and Vinegar Sauce. Place each rack of ribs over the butter meat side down. Season the bone side with additional rub and wrap the foil tightly around the ribs.
5. Place the ribs back on the pit for an additional 2.5 hours or until the meat is "fall-off-the-bone" tender. The internal temperature should be around 212-215 degrees
6. Carefully remove each slab of ribs from the foil wrap and place on a foil lined baking sheet. Apply a little more The BBQ Rub and place back on the pit for 4-5 minutes. Drizzle The BBQ Sauce over the top and cook an additional 5-10 minutes to set the sauce.
7. Remove the ribs from the smoker and serve - you won't need a knife for these ribs because the ribs will be Falling-Off-The-Bone!

INGREDIENTS:
1 kilo pork spareribs
1 cup Sprite (or 7up)
10 pieces calamansi
¼ cup soy sauce
Pepper to taste
5 cloves of garlic
1 medium onion
1 red bell pepper (optional)
1 tablespoon sugar
½ cup tomato sauce
Fish sauce or salt to taste
2 cups of water
2 dried bay leaves

Directions:

Wash and prepare the pork spareribs and place them into a container. Add the Sprite, calamansi juice, soy sauce and pepper. Gently mix them using the hands. Let them marinate for at least an hour.
Heat some oil in a pan. Sear the marinated spareribs (reserve the marinade). Flip them to cook the other side. When nicely seared on both sides, set them aside.
Using the same pan, melt some butter. Add the garlic and onions and saute for a few minutes. Add the seared spareribs back to the pan and saute them together.
Add the bay leaves, the marinade and some water. Cover the pan and let it simmer using medium low heat for 30 to 40 minutes or until the ribs are tender.
When tender, add the tomato sauce and sugar. Season using fish sauce or salt. Cover the pan and cook for a few minutes until the sauce is reduced.
In the last minute of cooking, add some chopped red bell peppers (optional).
Transfer the braised pork spareribs to a serving plate. Enjoy it with a lot of hot steaming rice. Yum!
